Peanut Clusters

1 cup of chocolate chips
1 cup of butterscotch chips
1 cup of peauts
cup of cornflakes
Melt chipits over low heat.Remove from heat add peanuts and cornflakes.Drop by spooonfuls on to waxed paper cover cookie sheets.Refrigerate until firm.I double the recipe as the bags hold 2 cups of chipits.ENJOY!!!

All American Baked Lasagna

1/2 c. chopped onion
1lb. ground beef
2 large cans tomato sauce
1/2 c. Parmesan cheese
6 oz. grated Mozzarella
1 tsp. oregano
1 tsp. sugar
1tsp. salt
1/4 tsp. pepper

Cook onion & beef until brown. Combine sauce and spices with beef mixture. Simmer 30 minutes or until thick. Cook lasagna while beef mixture is simmering. Arrange 1/3 lasagna in greased pan. Cover with 1/3 sauce & beef mixture, 1/3 Parmesan and Mozzarella and repeat until end, with generous layer of cheese on top. (I don't measure my cheese - I like lots). Bake in preheated 350 degree oven for 30 minutes. Let stand for 10 minutes before cutting.

Mountain Dew Dumplings

2 cans crescent rolls
2-3 firm apples, peeled, cored and cut into 6-8 slices
1-1/2 cup sugar
1 tsp. cinnamon
2 sticks oleo/butter
1 (12oz.) Mountain dew soda

Preheat oven to 350 degrees. Place one apple slice in each triangle of dough. Roll up large end to small end. Place all rolled apple slices in 9x13 pan. Melt butter/oleo in small pan, add cinnamon and sugar. Pour mixture over dumplings and pour Mountain Dew around dumplings. Bake 45 min. Make approx 18 dumplings, but only serves about 5 or 6 people, because everyone wants more than one.
I have made these with several different kinds of apples and have used Sprite and/or Mountain Dew

Bran Muffins In Microwave

This makes a very large batch, but goes quickly when grandchildren are here!

Favorite Bran Muffins
3 cups whole bran cereal 1 cups boiling water 2 cups buttermilk 1 1/2 cups brown sugar 1/2 cup shortening 3 eggs 3 cups sifted flour 2 teaspoons baking soda 1/2 teaspoon salt *Optional - cinnamon-sugar Mix 3 tablespoons sugar 3/4 teaspoon cinnamon

1. Microwave water in glass measure until boiling.

2. Measure cereal in large mixing bowl. Pour boiling water over cereal. Cool to lukewarm. Add buttermilk.

3. In mixer bowl, cream shortening and sugar. Add eggs, one at t time. Beat well after each addition. Stir into cooled bran mixture.

4. Combine flour, soda and salt. Add to bran mixture. Stir just to moisten. Do NOT over-mix.

5. Store, refrigerated, in tightly covered containers or jars until needed. Batter keeps up to one month.

Makes 3 to 4 dozen muffins, depending on size.

TO MICRO-BAKE BRAN MUFFINS:

1. Spoon batter into paper-lined microwave muffin pan or glass custard cups. Use two paper liners for each muffin. Fill each half full.

2. Sprinkle lightly with cinnamon sugar, if desired.

3. Microwave with full power.

1 muffin 1/2 minute if refrigerated 3/4 minute
2 muffins 3/4 minute 1 1/4 minutes
4 muffins 1 1/4 minutes 1 3/4 minutes
6 muffins 1 3/4 minutes 2 1/4 minutes

Meatloaf

I’ve made this meat loaf and it is my favorite and DH's too. I add a clove of chopped or minced garlic (depending on how ambitious I feel.)

Have substituted ground turkey because I like it better than beef and it is delicious this way too. I just don't put the ketchup on top with the ground turkey but serve mayo on the side for dipping or spredding over the top.

I serve it with either mashed potatoes or mac n’ cheese and a tossed salad or cooked veggies but like it best in sandwiches the next day.

Potatoes Supreme

From a LQS Newsletter:

Potatoes Supreme
6 med. potatoes (or use 30 oz. bag frozen Shredded Potatoes)
1/4 C. melted butter
1 can Cream of Chicken Soup (undiluted)
1 C. sour cream
1/2 C. Shredded cheese
1/3 C. chopped onions
2 C. crushed corn flakes
2 T melted butter
Grate potatoes and set aside. Mix butter, soup, sour cream, cheese and onions. Mix lightly with potatoes. Put into a greased 9" x 13" pan. Mix 2T melted butter with cornflakes. Sprinkle on potatoes. Bake 30 minutes at 350 degrees. Can be made ahead of time and refrigerated.

Coca Cola Salad

COCA-COLA SALAD

Preparation time: 20 minutes.

Salad:
1 pkg. Black Cherry Jell-O (3 oz.)
1 pkg. Red Cherry Jell-O (3 0z.)
2 cups Coca-Cola Classic
1 can black bing cherries
1 can pineapple chunks, cut in half
1 cup chopped nuts
2-1/2 cups reserved juices from fruit

Bring Coke to a boil. Pour over Jell-O. Stir until Jell-O is dissolved. Add fruit, stir. Add juices and nuts. Pour into mold. Chill until set.

Topping:
1 cup of whipping cream
1 Tbsp. sugar
1 tsp. vanilla

Whip cream. Blend in sugar and vanilla.

Top salad with whipped cream just before serving.

This was in a cookbook (from Cibolo, Texas) Betty gave Ava. Excellent flavor.

The black cherry Jell-o is very hard to find. If you like this recipe, buy all of it whenever you see it.

Colorful Pasta Salad

Colorful Pasta Salad

1 pkg multicolored noodles, cooked and drained
1 can black olives, drained
1 can green olives, drained
1 small package pine nuts
1 med red onion, chopped
1 pkg grape tomatoes
1 pkg provolone cheese, cut into small squares
1 pg pepperoni's
carrots, chopped
green peppers, chopped
red peppers, chopped
1 pkg dry Zesty Italian dressing (sprinkle onto hot pasta after draining pasta)
1 bottle Zesty Italian dressing, Pour onto salad and allow to marinate 1-2 hours before serving.

I like this because it can be made ahead. I usually don't have any leftovers.

Strawberry Lemonade

STRAWBERRY LEMONADE

I have made strawberry lemonade from a similiar recipe, I use diet 7-up, sugar free lemonade mix , a handful of frozen sugar free strawberries, a 4 or 5 ice cubes. It's delicious, slushy sweet and fruity, and the best part is it's 0 points on WW Plus.

Country Time Lemonade with Ginger Ale

DD brought over a canister of Country Time Lemonade mix and a big bottle of Ginger ale. She used the ginger ale in place of water to mix the lemonade, sliced a lemon in the pitcher and poured over glasses of ice. So good and a nice treat on a hot day.

Now we are thinking doing it with Kool Aid mix.

Summer Slaw

SUMMER SLAW
 
For anyone having bbqs or having to take a dish - this is an easy one to make and you dont have to worry about it in the sun or heat!!!

I bag coleslaw mix ( I like the one with carrots etc)
Small onion (diced)
Dressing
1 cup vinegar
1 cup sugar (I add just a little more because I dont like things really sour lol) Just taste it before you pour it on
Pepper and salt to taste

Whisk until sugar is dissolved (You can heat in microwave to help dissolve sugar but dont pour over cabbage until cooled)
I like to let it sit in fridge overnite so its well marinated.
If you dont have time just add a lttle olive oil to help dressing stick to slaw. Do in morning for that evening!


Finely chopped green peppers ,Celery salt or celery seasoning-can also be added

Keeps in fridge for a week.

Creamy Cashew Brownies

CREAMY CASHEW BROWNIES

1 (1 lb. 5.5 oz.) pkg. Pillsbury Traditional Fudge Brownie Mix
1/3 cup water
¼ cup oil
1 egg
1 cup chocolate chips if desired (I changed this a little and also sprinkle extra chocolate chips over the top of the brownies after they are frosted)
2 (8 oz.) pkg. cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla
1 ½ cups cashews or peanuts
½ cup hot fudge topping, warmed

Heat oven to 350 degrees. Grease bottom of 13” x 9” pan. In large bowl, combine brownie mix, water, oil and egg; beat 50 strokes with spoon. Stir in chocolate chips. Spread in prepared pan.

Bake at 350 for 24 to 27 minutes. DO NOT OVERBAKE. Cool completely.

In medium bowl, beat cream cheese, sugar and vanilla until smooth; spread over cooled base. Sprinkle cashews over cream cheese mixture. Drizzle with hot fudge sauce. NOTE: this is where I sprinkle on extra chocolate chips but it isn’t part of the original recipe. Refrigerate until serving time. Store in refrigerator. 24 servings.
I found this recipe in 97’ in a magazine and it is my favorite brownie recipe. It is rich and decadent, perfect when needing a chocolate fix. I like to make this for company or to take to gatherings so there aren’t left over’s to tempt me. These are always a crowd pleaser. They also go well with ice cream, especially coffee.

Caramel Apple Salad


Carmel Apple Salad
3 apples chopped (any kind, mix and match) fuji works great
1 cup honey roasted peanuts
1 cup mini marshmellows
1 small tub of Cool Whip
1 8 oz can of crushed pineapple with juice
1 small box of instant butterscotch pudding (dry) just sprinkle in

Mix all together and let sit for about 1/2 hour before serving

This salad was a real hit at our luncheon. I promise you will love it!

farmquilter made this today, May 21, 2011 with these changes

this is the muffin recipe I used but thought it was a tad too thick and added 1/4 cup applesauce. Also added 2 eggs and beat the day lights out of the batter, to make it light and fluffy.
I used 2 cups home grown pumpkin, yellow cake mix and upped the pumpkin pie spice to 3 teaspoons.

Sausage Squash Lasagna (submitted by *QB LAB55)

Sausage, Squash Lasagna
2 lbs. Butternut squash or pumpkin halved & seeded
EVOO - extera virgin olive oil for liberal drizzling
Salt & pepper
Freshly grated nutmeg
3 cup chicken stock
2 Tbls. Honey
2 lbs. sweet Italian sausage ( I use bulk sausage )
4 Tbls butter
3 Tbls flour
1 quart of whole milk
2 boxes No boil flat lasagna noodles
2 cups grated Parmigiano - Reggiano cheese

Yields : 6 servings Preheat oven to 400 degress F

Preparation : Drizzle squash with a little EVOO, season with salt, pepper, & nutmeg. Roast cut side down on baking sheet, until tender about 40 minutes. Let cool enough to handle, then scoop flesh out of skin & add to food processor. Puree with stock & honey, in 2 batches, and reserve.

Heat a drizzle of EVOO in non stick skillet over medium-high heat & brown sausage, crumbling into very small pieces as it cooks, about 7 - 8 minutes.

While sausage cooks, heat a pot over medium-high heat. Add butter and melt, whisk in flour, cook 1 minute then whisk in milk. Season with salt & pepper, a little freshly grated nutmeg. Cook until thickened, about 7 - 8 minutes, whisking occasionally.

Dot some squash puree in bottom of a casserole/ lasagna dish then add a layer of pasta. Top with 1/3 of cooked sausage & cover lightly with squash puree. Cover another layer of pasta, 1/3 of bechamel sauce & 1/2 cup Parmigiano - Reggiano cheese. Repeat with 2 more layers, ending each with bechamel sauce and using all of the remaining cheese for top layer.

Cover with foil and bake for 30 minutes, uncover and cook 15 minutes longer to brown top.


Note : To save some time I have prepared squash the day before & refrigerated.

Poppy Seed Chicken

4 Chicken Breasts
1 small onion, diced or chopped
4 ribs of celery, diced or chopped
3 carrots, diced or chopped
Salt & black pepper to taste
2 cans Cream of Chicken soup or
1 can Cream of Chicken soup and 1 can Cream of Celery soup
16 oz sour cream (2 cups)
2 sticks of butter, melted
2 sleeves of Ritz Crackers (crush into fine or coarse crumbs)
2 Tbsp Poppy Seeds
Pam Spray Shortening

Put first five ingredients into a pot and add water to cover everything; bring to boil and simmer until chicken is cooked. (Save broth and vegetables and another day cook some egg noodles or rice and serve as homemade soup!) Cool the chicken and shred or cut up into small chunks

Spray 13” x 9” baking pan or dish with Pam.

Mix soups and sour cream together and stir chicken in gently so you don’t break it up too much. Spread this mixture in the baking pan.

Mix together the cracker crumbs, butter and poppy seeds. * Spread this mixture evenly over the chicken mixture.

Cover with foil and bake at 350 for 45 minutes. Remove foil and bake another 15 minutes to completely heat the chicken through.

* If you have a problem eating poppy seeds, several of my friends have made this recipe without using the poppy seeds and they love it that way too!

Crockpot - Easy Peasy Baked Beans submitted by *QB burnsk

Easy-peasy baked beans:

2 cans of 28 oz. Bush's baked beans
Cook one pound of bacon to crispy (or you can buy a bag of real bacon already cooked at Sam's club in the salad dresssing aisle)
Cook one pound ground round
One onion chopped
Garlic to taste
3-5 T yellow mustard
1/2 - 3/4 box dark brown sugar (I only use 1/2 box)
Put all the ingredients into a crock pot and mix well
Cook on low until heated

I guarantee your crock pot will go home empty.

Bean Dip Recipe by *QB Scrap Happy

Bean Dip  (Recipe Submitted by Scrap Happy from Florida, from QB)

1 16 oz. can of bean dip (or 2 cups of your own homemade bean dip)

1 (1.25 oz.) pkg. taco seasoning mix

1 (8 oz.) carton sour cream

¼ cup mayo (optional)

2 cups of your favorite salsa

1 (6 oz.) container of avocado dip (or ¾ cup of your own homemade)

1 (4.5 oz.) can sliced black olives

2 large tomatoes, diced

1 garlic clove, minced (optional)

1-3 jalapenos cut into small rings (wear gloves. If you don't wear gloves wash your hands well after cutting hot peppers and don’t touch your eyes when handling hot peppers – ask me how I know.)

6 oz. of grated Monterey Jack, Cheddar, or Jalepeno cheese or a blend of the 3

Combine beans and ½ of the seasoning mix. Combine sour cream and mayo and ½ of the seasoning mix. Spread bean mixture in 9” x 13” dish. Layer remaining ingredients in the order listed. Serve with tortilla chips. Enjoy!

Watergate Salad

WATERGATE SALAD

1 can (20 oz.) DOLE Crushed Pineapple, in juice, undrained
1 pkg.  (3.4 oz.) JELL-O Pistachio Flavor Instant Pudding
1 cup JET-PUFFED Miniature Marshmallows
1/2 cup  chopped PLANTERS Pecans
1-1/2 cups thawed COOL WHIP Whipped Topping

MIX first 4 ingredients in large bowl until well blended.
STIR in COOL WHIP.
REFRIGERATE 1 hour.
